Ingredients

  • 1.5 cups Almond flour
  • 2 cups Mozzarella cheese, shredded
  • 3 tablespoons Cream cheese
  • 1 large Egg
  • 1 teaspoon Baking powder
  • 1 cup Cooked ham, diced
  • 2 tablespoons Cream cheese (for filling)
  • 1 teaspoon Dijon mustard
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 for brushing Egg yolk
  • 1 tablespoon Sesame seeds

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

In a microwave-safe bowl, combine the shredded mozzarella cheese and 3 tablespoons of cream cheese. Microwave on high for about 1 minute, or until melted and easy to stir.

Step 3

Add the almond flour, baking powder, and a large egg to the melted cheese mixture. Mix all the ingredients well until a dough forms.

Step 4

Knead the dough on a flat surface until smooth. If the dough becomes sticky, dust your hands with a little almond flour.

Step 5

Roll the dough into a large circle, about 1/4 inch thick, on a piece of parchment paper. Slice the circle into 8 triangular wedges, similar to slicing a pizza.

Step 6

In a small bowl, mix the diced cooked ham, 2 tablespoons of cream cheese, Dijon mustard, salt, and pepper until well combined.

Step 7

Place a spoonful of the ham mixture onto the wider end of each triangle.

Step 8

Carefully roll each triangle, starting from the wide end, to form a crescent shape.

Step 9

Place each rolled Schinkengipfel onto the prepared baking sheet.

Step 10

Brush each pastry with egg yolk and sprinkle with sesame seeds.

Step 11

Bake in the preheated oven for 18-20 minutes or until the pastries are golden brown.

Step 12

Let cool for a few minutes before serving.
