Ingredients

  • 1 pound ground beef
  • 0.5 cup zucchini
  • 0.5 cup bell pepper
  • 0.5 cup mushrooms
  • 0.25 cup parmesan cheese
  • 0.25 cup almond flour
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil

Directions

Step 1

Preheat the oven to 400°F (200°C).

Step 2

Grate the zucchini using a box grater and finely chop the bell pepper and mushrooms. Squeeze the excess moisture out of the zucchini using a clean kitchen towel.

Step 3

In a large mixing bowl, combine the ground beef, grated zucchini, chopped bell pepper, chopped mushrooms, parmesan cheese, almond flour, egg, garlic powder, onion powder, dried oregano, salt, and black pepper. Mix until all the ingredients are well incorporated.

Step 4

Roll the mixture into approximately 1.5-inch meatballs, making sure they are uniform in size for even cooking.

Step 5

Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the meatballs and sear them on all sides until golden brown, about 6-8 minutes.

Step 6

Transfer the skillet to the preheated oven and bake for an additional 15 minutes, or until the meatballs are cooked through.

Step 7

Remove the skillet from the oven and let the meatballs cool slightly before serving.

Step 8

Serve the meatballs warm, optionally garnished with fresh herbs like parsley or basil for added flavor.
