  • 500 grams chicken breast
  • 2 tablespoons coconut oil
  • 3 tablespoons soy sauce (or tamari for gluten-free)
  • 3 cloves garlic cloves
  • 1 inch piece ginger, fresh
  • 200 grams broccoli florets
  • 1 large bell pepper, red
  • 1 medium zucchini
  • 150 grams button mushrooms
  • 2 stalks green onions
  • 1 teaspoon sesame oil
  • 1 tablespoon sesame seeds
  • 0.5 teaspoons salt
  • 0.5 teaspoons black pepper

Directions

Step 1

Begin by slicing the chicken breast into thin strips. Mince the garlic and ginger. Slice the bell pepper into thin strips, cut the zucchini into half-moons, and slice the mushrooms. Cut the green onions into 1-inch pieces.

Step 2

In a large wok or frying pan, heat 1 tablespoon of coconut oil over medium-high heat. Add the chicken strips and season them with salt and black pepper. Stir-fry the chicken until it is browned and cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.

Step 3

Add the remaining 1 tablespoon of coconut oil to the same pan. Add the minced garlic and ginger, and sauté for about 30 seconds until fragrant.

Add the broccoli florets, bell pepper, and zucchini to the pan. Stir-fry the vegetables for about 4 minutes until they begin to soften.

Drizzle the sesame oil over the stir-fry, and give it a final toss. Sprinkle with sesame seeds and the remaining green onions.
