Ingredients

  • 1 large head Cauliflower
  • 2 tablespoons Olive oil
  • 1 medium, diced Onion
  • 3 minced Garlic cloves
  • 0.5 cup Heavy cream
  • 4 ounces Cream cheese
  • 1 cup, shredded Cheddar cheese
  • 0.5 cup, grated Parmesan cheese
  • 2 large Eggs
  • 1 teaspoon, finely chopped Fresh rosemary
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 cup Almond flour
  • 4 tablespoons, melted Butter

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Break the cauliflower into florets and steam until tender, about 10-15 minutes.

Step 3

In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and cook until soft, about 5 minutes.

Step 4

Add the minced garlic to the skillet and cook for another minute. Remove from heat and set aside.

Once the cauliflower is tender, drain well and place it in a food processor. Add the heavy cream and cream cheese, and blend until smooth.
