Ingredients

  • 2 cups Almond flour
  • 0.25 cup Coconut flour
  • 0.5 cup Butter, melted
  • 1 large Egg
  • 0.5 teaspoon Salt
  • 2 tablespoons Olive oil
  • 2 cloves Garlic, minced
  • 2 cups Mixed mushrooms, sliced
  • 1 teaspoon Thyme, fresh
  • 1 teaspoon Rosemary, fresh
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.5 cup Parmesan cheese, grated

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

In a large mixing bowl, combine the almond flour, coconut flour, melted butter, egg, and 1/2 teaspoon of salt. Mix until a dough forms.

Step 3

Press the dough into a 9-inch tart pan, ensuring it is evenly distributed across the bottom and up the sides. Poke holes in the bottom with a fork to prevent bubbling.

Step 4

Bake the crust in the preheated oven for 12-15 minutes, or until lightly golden. Set aside to cool.

Step 5

In a skillet, heat olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.

Step 6

Add the sliced mushrooms to the skillet. Cook for approximately 8-10 minutes, stirring occasionally, until the mushrooms release their moisture and begin to brown.

Step 7

Stir in the thyme, rosemary, 1/2 teaspoon of salt, and black pepper, cooking for another 2 minutes.

Step 8

Spread the mushroom mixture evenly over the baked crust.

Step 9

Sprinkle the grated Parmesan cheese over the mushroom filling.

Step 10

Place the tart back in the oven and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.

Step 11

Let the tart cool slightly before slicing. Serve warm or at room temperature.
