Ingredients

  • 500 grams Ground duck
  • 1 large Egg
  • 30 grams Almond flour
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Smoked paprika
  • 1 large Avocado
  • 4 pieces Lettuce leaves
  • 200 grams Cheddar cheese
  • 1 tablespoon Olive oil
  • 1 medium Lime

Directions

Step 1

Preheat the oven to 200°C (392°F).

Step 2

In a large bowl, combine the ground duck, egg, almond flour, garlic powder, onion powder, salt, black pepper, and smoked paprika. Mix well until all ingredients are thoroughly combined.

Step 3

Divide the mixture into 4 equal portions and shape each into a patty about 1.5 cm (0.6 inch) thick.

Step 4

Heat the olive oil in a large skillet over medium-high heat. Add the duck patties and cook for 4-5 minutes on each side or until the internal temperature reaches 74°C (165°F). Remove and set aside.

Step 5

For the cheese crisps, line a baking sheet with parchment paper. Place 4 equally spaced mounds of grated cheddar cheese, each about 50 grams, on the sheet. Flatten them slightly.

Step 6

Bake the cheese crisps in the preheated oven for 5-7 minutes or until they are golden brown and slightly crisp. Allow them to cool on the baking sheet until firm.

Step 7

While the cheese crisps cool, slice the avocado and sprinkle with a squeeze of fresh lime juice to prevent browning.

Step 8

To assemble the burgers: place one cheese crisp on a plate. Top with a lettuce leaf, a duck patty, slices of avocado, another lettuce leaf, and finally, cover with a second cheese crisp.

Step 9

Repeat the assembling process for the remaining duck patties and serve immediately.
