Ingredients

  • 15 oz Canned chickpeas, drained and rinsed
  • 1 cup Almond flour
  • 0.5 cup Grated parmesan cheese
  • 1 large Egg
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp Dried oregano
  • 0.5 tsp Dried basil
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 2 tbsp Olive oil
  • 2 tbsp Chopped fresh parsley

Directions

Step 1

Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

In a food processor, combine the drained chickpeas, almond flour, parmesan cheese, and egg. Pulse until the mixture is well combined but not completely smooth.

Step 3

Transfer the mixture into a large bowl and add garlic powder, onion powder, dried oregano, dried basil, salt, and black pepper. Mix well using a spoon or your hands until the spices are evenly distributed.

Step 4

With slightly wet hands to prevent sticking, form the mixture into approximately 16 balls, about 1.5 inches each, and place them onto the prepared baking sheet.

Step 5

Brush the chickpea balls with olive oil to help them crisp up in the oven.

Bake in the preheated oven for 15-20 minutes, or until the balls are golden brown and firm to the touch.
