  • 2 pieces chicken breasts
  • 1 head cauliflower

  • 1 cup broccoli florets
  • 1 medium red bell pepper
  • 2 tablespoons soy sauce
  • 3 cloves garlic
  • 1 teaspoon ginger
  • 2 stalks green onions
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Begin by preparing the cauliflower rice: cut the cauliflower into small florets and pulse in a food processor until it resembles rice grains. Set aside.

Step 2

Dice the chicken breasts into bite-sized pieces and season with salt and black pepper.
