Ingredients

  • 500 grams ground beef
  • 2 medium-sized zucchini
  • 1 small onion
  • 3 large garlic cloves
  • 50 grams Parmesan cheese
  • 1 large egg
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil
  • 10 leaves fresh basil leaves
  • 2 tablespoons tomato paste
  • 200 ml beef stock

Directions

Step 1

Preheat the oven to 180°C (350°F).

Step 2

Finely chop the onion and garlic cloves.

Step 3

In a large mixing bowl, combine the ground beef, chopped onion, garlic, Parmesan cheese, egg, salt, black pepper, and Italian seasoning. Mix thoroughly using your hands until all ingredients are well combined.

Step 4

Wash and trim the ends of the zucchini. Using a vegetable peeler, carefully peel the zucchini into long, thin slices.

Step 5

Lay out each zucchini slice and place about 1-2 tablespoons of the beef mixture at one end of the slice.

Carefully roll the zucchini around the meat, creating a roll. Secure the roll with a toothpick if necessary.
