Ingredients

  • 4 large onions
  • 2 tablespoons olive oil
  • 1 cup Parmesan cheese, grated
  • 4 ounces cream cheese, softened
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh thyme leaves
  • 1 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Cut off the top quarter of each onion and peel away the outer layers without removing too much flesh to ensure the onion maintains its shape. Trim a small amount from the bottom so they sit flat.

Use a spoon or melon baller to hollow out the center of each onion, leaving about a quarter inch of onion on all sides. Reserve the scooped out onion centers for another use.
