Ingredients

  • 12 slices bacon
  • 2 medium yellow onion
  • 3 cloves garlic
  • 0.5 cup strong brewed coffee
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons erythritol
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon salt
  • 0.5 cup water

Directions

Step 1

Cut the bacon into small pieces. Heat a large skillet over medium heat and cook the bacon pieces until they are crispy, about 10 minutes. Use a slotted spoon to transfer the bacon to a plate lined with paper towels.

While the bacon is cooking, peel and finely chop the onions, and mince the garlic.

Pour out most of the bacon fat from the skillet, leaving about 2 tablespoons in the pan. Add the chopped onions to the skillet and cook over medium heat until they become soft and translucent, about 10 minutes. Stir occasionally to prevent burning.

Add the minced garlic to the onions and cook for another 2 minutes until fragrant.

Stir in the brewed coffee, apple cider vinegar, erythritol, smoked paprika, black pepper, and salt. Scrape the bottom of the pan to release any browned bits.
