Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 3 tablespoons Olive oil
  • 2 tablespoons Butter
  • 3 cloves Garlic cloves, minced
  • 2 tablespoons Lemon juice
  • 1 cup Chicken broth
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Fresh thyme leaves
  • 4 cups Baby spinach

Directions

Step 1

Place the chicken breasts between two sheets of plastic wrap and pound to an even thickness of about 1/2 inch using a meat mallet or rolling pin.

Step 2

Season both sides of the chicken breasts with salt and pepper.

Step 3

In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.

Step 4

Add the chicken breasts to the skillet and cook for 5 to 6 minutes on each side or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

Reduce the heat to medium and add 1 tablespoon of butter to the skillet along with the remaining tablespoon of olive oil.

Add the minced garlic and cook for about 1 minute until fragrant.

Melt the remaining tablespoon of butter into the sauce and add the baby spinach, cooking until it wilts slightly.
