Ingredients

  • 8 oz Ground sausage
  • 1 cup Cheddar cheese, shredded
  • 4 Eggs
  • 1 tbsp Heavy cream
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 1 tbsp Coconut oil
  • 4 Low-carb tortillas
  • 1 Avocado, sliced
  • 0.5 cup Salsa
  • 2 tbsp Fresh cilantro, chopped

Directions

Step 1

Heat a large skillet over medium heat and add ground sausage. Cook for about 5-7 minutes, stirring and breaking apart with a spoon until browned and cooked through. Remove sausage from the skillet and drain excess fat if necessary.

Step 2

In a medium bowl, whisk together the eggs, heavy cream, salt, and black pepper until well combined.

Step 3

In the same skillet, add coconut oil and let it melt over medium heat. Pour the egg mixture into the skillet. Stir occasionally until the eggs are scrambled and just set, about 2-3 minutes.

Return the sausage to the skillet and add in the shredded cheddar cheese, stirring until the cheese is melted and the sausage is evenly distributed.
