Ingredients

  • 2 cups Almond flour
  • 1.5 cups Mozzarella cheese, shredded
  • 2 tablespoons Cream cheese, softened
  • 4 large Eggs
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 1 pound Ground breakfast sausage
  • 4 slices Cheddar cheese, sliced
  • 2 tablespoons Butter

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

In a bowl, mix almond flour, baking powder, and salt; set aside.

Step 3

In a microwave-safe bowl, combine 1.5 cups of shredded mozzarella and cream cheese. Microwave on high for 1-2 minutes until the cheeses are melty and can be blended together smoothly.

Step 4

Quickly mix the melted cheese with the almond flour mixture and add one egg. Stir well to form a dough.

Step 5

Once the dough is well-combined, roll it out between two sheets of parchment paper to about 1/4 inch thick. Cut the dough into 4 rectangular shapes, as even as possible.

Step 6

In a skillet over medium heat, cook the ground sausage until fully browned and cooked through, about 7-8 minutes. Drain excess fat and set aside.

Step 7

In another pan, melt butter over medium heat, and scramble the remaining 3 eggs until just set. Transfer the eggs to a plate and set aside.

Step 8

Place a cooked sausage patty, scrambled eggs, and a slice of cheese on each of the dough rectangles. Carefully roll the dough over the fillings to form a croissant shape, pinching the edges to seal.

Step 9

Place the croissants on the prepared baking sheet and bake for 15-18 minutes until the dough is golden brown and cooked through.

Step 10

Allow the croissants to cool for a few minutes on the wire rack before serving.
