Ingredients

  • 250 grams Button mushrooms
  • 2 tablespoons Coconut oil
  • 2 medium Garlic cloves
  • 100 ml Coconut milk
  • 3 tablespoons Crunchy peanut butter
  • 1 tablespoon Soy sauce (or tamari for gluten-free)
  • 1 tablespoon Lime juice
  • 1 teaspoon Ground coriander
  • 0.5 teaspoon Chili powder
  • 0.5 teaspoon Salt
  • 2 tablespoons Fresh cilantro
  • 2 tablespoons Crushed peanuts

Directions

Step 1

Clean the button mushrooms with a damp cloth and slice them in half unless they are very small, in which case you can leave them whole.

Step 2

Finely mince the garlic cloves.

Step 3

In a large skillet, heat the coconut oil over medium heat.

Step 4

Add the minced garlic to the skillet and sauté for about 1 minute until fragrant.

Step 5

Add the mushrooms to the skillet and cook them until they are golden and their moisture begins to evaporate, about 5-7 minutes.

In a small bowl, mix together the coconut milk, peanut butter, soy sauce (or tamari for a gluten-free version), lime juice, ground coriander, chili powder, and salt until smooth.
