Remove the core from the cabbage head. Boil in a pot of salted water until leaves are tender, about 10-15 minutes. Gently peel leaves off and set aside to cool.
In a large pan, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes. Stir in minced garlic and cook for another 1 minute.
