Ingredients

  • 200 grams Green chilies
  • 3 medium Shallots
  • 4 small Garlic cloves
  • 2 small Tomatoes
  • 2 tablespoons Lime juice
  • 3 tablespoons Coconut oil
  • 1 teaspoon Salt
  • 1 teaspoon Sugar substitute (erythritol or stevia)

Directions

Step 1

Wash and roughly chop the green chilies, keeping the seeds in for an extra kick.

Step 2

Peel and slice the shallots and garlic cloves.

Step 3

Slice the tomatoes into quarters.

Step 4

Heat 2 tablespoons of coconut oil in a pan over medium heat.

Step 5

Add the shallots and garlic to the pan and sauté until fragrant and slightly golden, about 3-4 minutes.

Step 6

Add the chopped green chilies and tomatoes to the pan, cooking and stirring for another 5 minutes until they are softened.

Step 7

Season with salt and sugar substitute, stirring to combine.

Step 8

Remove the mixture from the heat and let it cool for a few minutes.

Step 9

Transfer the cooked ingredients to a food processor or blender, add the lime juice, and pulse until you reach a rough paste consistency. You may add a tablespoon of water if needed to help with the blending.

Step 10

Heat the remaining 1 tablespoon of coconut oil in the pan and return the blended sambal to the pan.

Cook for another 3-4 minutes over medium heat, stirring continuously until the sambal thickens slightly.
