Ingredients

  • 1 medium head Cauliflower
  • 4 ounces Cream cheese
  • 4 sheets Nori sheets
  • 8 ounces Salmon, sashimi-grade
  • 1 cucumber Cucumber, julienned
  • 1 avocado Avocado, sliced
  • 2 tablespoons Soy sauce or tamari
  • 2 tablespoons Rice vinegar
  • 1 tablespoon Sesame seeds
  • 0.25 teaspoon Salt

Directions

Step 1

Prepare the cauliflower rice by chopping the cauliflower into florets and pulsing them in a food processor until they resemble small, rice-like pieces.

Step 2

In a non-stick pan over medium heat, sauté the cauliflower rice for about 8-10 minutes until it is tender and moisture has evaporated.

Step 3

Transfer the cooked cauliflower rice to a medium bowl and mix in the cream cheese, rice vinegar, and salt until well combined. Let it cool to room temperature.

Place a nori sheet shiny-side down on a sushi mat or a clean kitchen towel lined with plastic wrap.
