  • 4 pieces (6-ounce each) Salmon fillets
  • 2 cups Almond flour
  • 0.5 cup Coconut flour
  • 1 teaspoon Xanthan gum
  • 0.5 teaspoon Salt
  • 0.5 cup Unsalted butter
  • 3 large Eggs
  • 1 tablespoon Heavy cream
  • 2 tablespoons, chopped Fresh dill
  • 1 teaspoon Garlic powder
  • 2 cups (fresh) Spinach leaves
  • 8 ounces Cream cheese
  • 1 tablespoon Olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a food processor, combine almond flour, coconut flour, xanthan gum, and salt. Pulse until well mixed.

Step 3

Add in the butter and 2 eggs, and pulse until the dough starts to come together. Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for 20 minutes.

Meanwhile, in a skillet, heat olive oil over medium heat. Add spinach and sauté until wilted. Transfer wilted spinach to a bowl and mix in cream cheese, dill, and garlic powder. Set aside.
