Ingredients

  • 4 cups cauliflower, cut into small florets
  • 2 tablespoons avocado oil
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 2 units celery stalks, diced
  • 0.5 cup red onion, finely chopped
  • 3 units boiled eggs, chopped
  • 0.5 cup mayonnaise
  • 1 tablespoon dijon mustard
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons fresh parsley, chopped
  • 0.5 teaspoon ground paprika

Directions

Step 1

Preheat your oven to 425°F (220°C).

Step 2

In a large bowl, toss cauliflower florets with avocado oil, half of the sea salt, and black pepper until well coated.

Step 3

Spread the cauliflower on a baking sheet lined with parchment paper.

Step 4

Roast the cauliflower in the preheated oven for about 20 minutes, or until tender and golden brown, stirring halfway through the cooking time.

While the cauliflower is roasting, prepare the other ingredients: dice the celery, chop the red onion and boiled eggs.
