Ingredients

  • 2 cups Almond flour
  • 0.5 cup Grated Parmesan cheese
  • 1 Egg
  • 0.25 cup Unsalted butter
  • 0.5 teaspoon Sea salt
  • 0.25 teaspoon Cracked black pepper
  • 1 tablespoon Fresh thyme leaves
  • 0.5 teaspoon Garlic powder
  • 3 medium Fresh tomatoes
  • 1 tablespoon Olive oil
  • 0.5 cup Ricotta cheese
  • 0.25 cup Fresh basil leaves

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large bowl, combine almond flour, grated Parmesan cheese, sea salt, cracked black pepper, and garlic powder.

Step 3

Melt the butter and stir it into the flour mixture, followed by the egg. Mix until a dough forms.

Step 4

Press the dough evenly into a 9-inch tart pan, ensuring it covers the bottom and slightly up the sides.

Step 5

Blind-bake the crust in the preheated oven for 10 minutes, then remove and set it aside to cool slightly.

Step 6

While the crust is baking, slice the fresh tomatoes into thin rounds and set them aside on a paper towel to absorb excess moisture.

Step 7

Spread the ricotta cheese over the slightly cooled crust.

Step 8

Layer the sliced tomatoes over the ricotta, overlapping slightly. Drizzle the olive oil over the tomato layer.

Step 9

Sprinkle the fresh thyme leaves over the top.

Step 10

Return the tart to the oven and bake for an additional 30 minutes or until the tomatoes are tender and the crust is golden brown.

Step 11

Remove from the oven and let cool slightly before slicing.

Step 12

Garnish with fresh basil leaves before serving.
