Ingredients

  • 1 cup Almond flour
  • 2 tablespoons Psyllium husk powder
  • 2 tablespoons Coconut flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 0.75 cup Hot water
  • 2 tablespoons Ghee or coconut oil, for cooking

Directions

Step 1

In a large mixing bowl, combine the almond flour, psyllium husk powder, coconut flour, baking powder, and salt.

Step 2

Gradually add the hot water into the dry ingredients, stirring continuously to form a dough. The dough should come together and be pliable.

Step 3

Let the dough rest for about 5 minutes to allow the psyllium husk to absorb the moisture.

Step 4

Divide the dough into 4 equal portions and roll each portion into a ball.

Step 5

Place a dough ball between two sheets of parchment paper. Using a rolling pin, roll the dough into a thin circle, aiming for a diameter of about 8 inches. The roti should be thin, almost transparent.

Step 6

Heat a non-stick skillet or a tawa over medium heat.

Step 7

Once hot, lightly grease the surface with ghee or coconut oil.

Step 8

Carefully place the rolled roti on the skillet. Cook for about 1-2 minutes or until you see bubbles forming on the surface.

Step 9

Flip the roti using a spatula and cook the other side for another 1 minute, pressing gently with the spatula to ensure even cooking.

Step 10

Remove from the skillet and repeat the process with the remaining dough balls.

Step 11

Serve the Keto Rumali Roti warm, with your favorite keto-friendly curries or sides.
