Ingredients

  • 1 medium head red cabbage
  • 2 tablespoons olive oil
  • 1 medium, diced yellow onion
  • 0.25 cup apple cider vinegar
  • 2 tablespoons Erythritol
  • 0.25 teaspoon ground cloves
  • 1 bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup water

Directions

Step 1

Remove the outer leaves from the head of red cabbage, then cut it into quarters and remove the core. Thinly slice the quarters into shreds.

Step 2

Heat the olive oil in a large pot over medium heat. Add the diced onion and sauté until it becomes translucent, about 5 minutes.

Step 3

Add the shredded cabbage to the pot, stirring to mix with the onion and to coat it with oil.

Step 4

Pour in the apple cider vinegar and water, then add the Erythritol, ground cloves, bay leaf, salt, and black pepper. Stir well to combine the ingredients.

Step 5

Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for about 40–45 minutes until the cabbage is tender.

Step 6

Stir occasionally during cooking to ensure the cabbage cooks evenly and does not stick to the pot.

Step 7

Once done, remove the bay leaf, adjust seasoning with additional salt or pepper if needed, and serve warm.
