Remove the outer leaves from the head of red cabbage, then cut it into quarters and remove the core. Thinly slice the quarters into shreds.
Heat the olive oil in a large pot over medium heat. Add the diced onion and sauté until it becomes translucent, about 5 minutes.
Add the shredded cabbage to the pot, stirring to mix with the onion and to coat it with oil.
Pour in the apple cider vinegar and water, then add the Erythritol, ground cloves, bay leaf, salt, and black pepper. Stir well to combine the ingredients.
