Ingredients

  • 1 whole Rotisserie chicken
  • 2 medium Celery stalks
  • 0.25 medium Red onion
  • 0.5 cup Mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon Lemon juice
  • 2 tablespoons Fresh parsley
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 medium Avocado
  • 0.25 cup Almonds

Directions

Step 1

Start by shredding the meat from the rotisserie chicken. Remove the skin, and use a fork to help you pull the meat from the bones. Place the shredded chicken in a large mixing bowl.

Step 2

Finely dice the celery stalks and the quarter red onion. Add them to the bowl with the chicken.

Step 3

In a small bowl, whisk together the mayonnaise, Dijon mustard, and lemon juice until well combined.

Chop the fresh parsley finely and add it to the bowl with the mayonnaise mixture. Stir it in along with the salt and black pepper to taste.
