Ingredients

  • 1 cup Almond flour
  • 2 tablespoons Coconut flour
  • 1 teaspoon Baking powder
  • 3 large Eggs
  • 1 cup Unsweetened almond milk
  • 0.5 teaspoon Salt
  • 2 tablespoons Butter
  • 0.25 cup Sugar-free chocolate spread
  • 0.5 cup (shredded) Cheddar cheese

Directions

Step 1

Preheat a frying pan or a griddle over medium heat.

Step 2

In a mixing bowl, combine almond flour, coconut flour, baking powder, and salt. Mix until well incorporated.

Step 3

In another bowl, beat the eggs thoroughly and add in the almond milk. Whisk until well blended.

Step 4

Gradually add the wet ingredients to the dry ingredients, stirring constantly to avoid lumps.

Step 5

Melt 1 tablespoon of butter in the preheated frying pan.

Step 6

Pour half of the batter into the pan, spreading it evenly to form a circle. Cook for about 2-3 minutes on each side or until golden brown and cooked through. Repeat with the remaining batter.

Step 7

Once both 'roti' are cooked, spread the sugar-free chocolate spread over one of them, and sprinkle cheddar cheese on top of the spread.

Step 8

Place the other 'roti' on top to form a sandwich. Press down lightly and allow the cheese to melt slightly.

Melt the remaining butter in the frying pan, then place the sandwich in the pan and cook until both sides are golden brown and the cheese is oozing out slightly.
