  • 2 pounds beef chuck roast
  • 2 tablespoons olive oil
  • 1 large onion
  • 2 medium bell peppers
  • 4 garlic cloves
  • 14.5 ounces canned tomatoes

  • 1 cup beef broth
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 2 bay leaves
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons capers
  • 0.5 cup green olives
  • 2 tablespoons cilantro

Directions

Step 1

Season the beef chuck roast generously with salt and pepper on all sides.

Step 2

Heat olive oil in a large Dutch oven over medium-high heat. Add the beef and brown on all sides, about 5-7 minutes. Remove the beef and set aside.

Slice the onion and bell peppers into thin strips. Mince the garlic cloves.
