Ingredients

  • 2 large red bell peppers
  • 8 ounces cream cheese
  • 1 cup Greek yogurt
  • 3 large garlic cloves
  • 1 tablespoon lemon juice
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons fresh parsley

Directions

Step 1

Preheat your oven to 450°F (230°C).

Step 2

Line a baking sheet with aluminum foil. Place the red bell peppers and garlic cloves (in skin) on the sheet.

Step 3

Drizzle 1 tablespoon of the olive oil over the peppers and garlic and roast in the oven for about 20 minutes, or until the peppers are charred on all sides.

Once roasted, remove the peppers and garlic from the oven and place the peppers in a bowl. Cover with plastic wrap and let them steam for about 10 minutes, which will make them easier to peel.

Step 5

After steaming, peel the skin off the peppers and remove the seeds. Peel the skins off the roasted garlic cloves.

In a food processor, combine the peeled roasted red peppers, roasted garlic, cream cheese, Greek yogurt, lemon juice, smoked paprika, salt, and black pepper.

Blend until the mixture is smooth and creamy.

Transfer the dip to a serving bowl. Drizzle with the remaining 1 tablespoon of olive oil and sprinkle with freshly chopped parsley.
