Ingredients

  • 3 medium-sized raw beetroot
  • 3 tablespoons olive oil

  • 0.25 teaspoon ground black pepper
  • 4 cups mixed salad greens
  • 4 ounces goat cheese
  • 0.5 cup walnuts
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon lemon juice

Directions

Step 1

Preheat your oven to 400°F (200°C).

Wash and peel the beetroot, then cut them into small wedges.

Place the beetroot wedges on a baking sheet. Drizzle with 2 tablespoons of olive oil, and sprinkle with salt and pepper. Toss to coat.
