Ingredients

  • 1 3-4 lbs Whole chicken
  • 3 tablespoons Olive oil
  • 1.5 teaspoons Salt
  • 1 teaspoon Ground black pepper
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried rosemary
  • 2 cups Chicken broth
  • 0.5 cup Heavy cream
  • 0.5 teaspoon Xanthan gum
  • 2 tablespoons Butter

Directions

Step 1

Preheat your oven to 425°F (220°C).

Step 2

Pat the chicken dry with paper towels to ensure crispy skin. Remove any giblets from the cavity.

Step 3

In a small bowl, mix together the salt, pepper, garlic powder, onion powder, dried thyme, and dried rosemary.

Rub the outside and inside of the chicken with olive oil, then sprinkle the spice mixture evenly over it.

Place the chicken breast-side up on a roasting rack set in a roasting pan.

Roast the chicken in the preheated oven for about 70-90 minutes, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh without touching the bone.
