Ingredients

  • 1 medium head Cauliflower
  • 2 tablespoons Olive Oil
  • 3 cloves Garlic Cloves
  • 2 tablespoons Tomato Paste
  • 1 cup Diced Tomatoes
  • 0.5 cup Vegetable Broth
  • 1 teaspoon Italian Seasoning
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black Pepper
  • 2 tablespoons Fresh Basil

Directions

Step 1

Cut the cauliflower into florets and place in a food processor. Pulse until the cauliflower resembles the texture of rice.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the cauliflower rice and sauté for about 5-7 minutes, until tender. Set aside.

Step 3

In a separate saucepan, heat the remaining 1 tablespoon of olive oil over medium heat. Add the minced garlic cloves and sauté until fragrant, about 1 minute.

Stir in the tomato paste and cook for an additional 1-2 minutes.
