Ingredients

  • 1 large head Cauliflower florets
  • 4 cups Fresh spinach
  • 2 tablespoons Olive oil
  • 3 minced Garlic cloves
  • 0.5 medium, finely chopped Onion
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Lemon juice
  • 0.25 cup, grated Parmesan cheese (optional)

Directions

Step 1

Begin by preparing the cauliflower rice. Wash and dry the cauliflower, then cut it into florets.

Step 2

Using a food processor, pulse the cauliflower florets in batches until the texture resembles rice grains. Be careful not to over-process, as you don't want it to become mushy.

Step 3

Heat a large skillet over medium heat and add the olive oil.

Step 4

Add the chopped onion to the skillet and sauté for 2-3 minutes or until it becomes translucent.

Step 5

Stir in the minced garlic and cook for an additional 30 seconds until fragrant.

Step 6

Add the cauliflower rice to the skillet and stir to combine with the onion and garlic. Season with salt and pepper.

Step 7

Cook the cauliflower rice for 5-7 minutes, stirring occasionally, until it starts to turn golden brown.

Step 8

Add the fresh spinach leaves to the skillet. Stir continuously until the spinach wilts and blends with the cauliflower rice, about 2-3 minutes.

Step 9

Remove the skillet from the heat and stir in the lemon juice.

Step 10

If desired, top with grated Parmesan cheese for additional flavor.

Step 11

Serve hot as a main dish or a side to your favorite protein. Enjoy!
