Ingredients

  • 300 grams Cauliflower
  • 60 grams Almond flour
  • 2 pieces Large eggs
  • 30 grams Parmesan cheese, grated
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Pepper
  • 2 tablespoons Olive oil
  • 100 grams Cream cheese
  • 2 tablespoons Chives, chopped
  • 0.25 teaspoons Garlic powder

Directions

Step 1

Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.

Step 2

Chop the cauliflower into florets and pulse in a food processor until it reaches a rice-like consistency.

Step 3

Transfer the cauliflower rice into a clean kitchen towel and squeeze out as much excess water as possible.

Step 4

In a large mixing bowl, combine the drained cauliflower rice, almond flour, beaten eggs, grated Parmesan cheese, salt, and pepper. Mix until well combined into a dough-like consistency.

Divide the mixture into 8 equal portions. Mould each portion into round, flat rice cake shapes, about 1 cm thick.
