Ingredients

  • 1.5 cups almond flour
  • 2 tablespoons cocoa powder
  • 0.5 cup erythritol sweetener
  • 1 teaspoon baking powder
  • 0.25 teaspoon salt
  • 0.5 cup butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon apple cider vinegar
  • 1 large egg
  • 2 tablespoons red food coloring
  • 2 ounces cream cheese

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a medium bowl, combine almond flour, cocoa powder, erythritol, baking powder, and salt. Whisk together until well mixed.

Step 3

In a large mixing bowl, beat the softened butter and cream cheese together until the mixture is smooth and creamy.

Step 4

Add the vanilla extract, apple cider vinegar, egg, and red food coloring to the butter and cream cheese mixture, beating until everything is well combined.

Step 5

Gradually mix the dry ingredients into the wet ingredients using a spatula or a mixer on low speed, until a dough forms.

Step 6

Scoop tablespoon-sized portions of the dough and roll them into balls. Place each ball on the prepared baking sheet, making sure to leave space between each for spreading.

Step 7

Gently press each ball down slightly to flatten it to about 1/2 inch thick.

Step 8

Bake in the preheated oven for 10-12 minutes, or until the edges are set and the centers are slightly soft.

Step 9

Remove cookies from the oven and let them cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
