Ingredients

  • 1 cup Almond flour
  • 1 tablespoon Coconut flour
  • 1 teaspoon Baking powder
  • 0.5 cup Erythritol
  • 3 large Eggs
  • 2 cups Heavy cream
  • 1 cup Almond milk (unsweetened)
  • 10 strands Saffron strands
  • 0.5 teaspoon Cardamom powder
  • 0.5 teaspoon Rose water
  • 2 tablespoons Pistachios (chopped)
  • 2 tablespoons Almonds (sliced)

Directions

Step 1

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the almond flour, coconut flour, baking powder, and erythritol.

Step 3

Add the eggs to the dry mixture and mix well to form a dough.

Step 4

Divide the dough into small, equal portions and roll them into balls, flattening slightly to form patties.

Step 5

Place the patties on the prepared baking sheet and bake in the preheated oven for about 15 minutes or until they are lightly golden.

Step 6

While the patties are baking, prepare the milk reduction by heating the heavy cream and almond milk in a saucepan over medium heat.

Step 7

Add the saffron strands, cardamom powder, and rose water to the milk mixture, stirring occasionally.

Step 8

Cook the milk mixture until it reduces by about half and becomes thick and creamy, which should take approximately 15 minutes.

Step 9

Remove the patties from the oven and let them cool slightly.

Step 10

Gently place the cooled patties in the milk mixture and let them soak for a few minutes, ensuring they absorb the flavors.

Step 11

Transfer the Keto Rasmalai to a serving dish, garnish with chopped pistachios and sliced almonds.

Step 12

Refrigerate for at least 1 hour before serving to allow the flavors to meld.
