Ingredients

  • 1 cup Almond flour
  • 1.5 cups Ricotta cheese
  • 0.5 cup Erythritol
  • 1 teaspoon Baking powder
  • 1 large Egg
  • 2 cups Heavy cream
  • 1 cup Almond milk (unsweetened)
  • 0.5 teaspoon Cardamom powder
  • 1 pinch Saffron strands
  • 2 tablespoons Pistachios, slivered
  • 1 teaspoon Rose water

Directions

Step 1

Preheat your oven to 350°F (175°C). Line a baking tray with parchment paper.

Step 2

In a large bowl, combine almond flour, ricotta cheese, 1/4 cup erythritol, and baking powder. Mix well until the mixture forms a smooth dough.

Step 3

Beat in the egg until the dough becomes pliable and easy to work with.

Step 4

Divide the dough into 12 equal portions and shape each portion into a flat patty.

Step 5

Place the patties on the prepared baking tray. Bake in the preheated oven for 15-20 minutes or until lightly golden and firm to touch. Remove from oven and let them cool completely.

In a large saucepan, combine heavy cream and almond milk. Bring the mixture to a boil over medium heat, stirring frequently.

Once boiling, reduce the heat to low and let it simmer for another 10 minutes. Stir in the remaining 1/4 cup erythritol and cardamom powder.

Add saffron strands and continue to simmer for another 5 minutes until the mixture thickens slightly.
