Ingredients

  • 1.5 cups Almond flour
  • 0.25 cup Coconut flour
  • 2 teaspoons Baking powder
  • 2 tablespoons Granular erythritol
  • 0.25 cup Unsalted butter
  • 6 large Eggs
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Ground cinnamon
  • 0.5 cup Sugar-free dried cranberries
  • 0.5 cup Chopped pecans

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a loaf pan with parchment paper, allowing some to hang over the sides for easy bread removal.

Step 2

In a medium bowl, whisk together the almond flour, coconut flour, and baking powder. Set aside.

Step 3

In a large mixing bowl, beat together the melted unsalted butter and granular erythritol until creamy and well combined. Add the eggs one at a time, beating well after each addition.

Step 4

Mix in the vanilla extract and ground cinnamon to the wet ingredients.

Step 5

Gradually add the dry ingredients to the wet ingredients, stirring until fully combined and smooth.

Step 6

Gently fold in the sugar-free dried cranberries and chopped pecans until evenly distributed throughout the batter.

Step 7

Pour the batter into the prepared loaf pan, spreading it evenly with a spatula.

Step 8

Place the loaf pan in the preheated oven and bake for about 50 minutes, or until the top is golden and a toothpick inserted into the center of the bread comes out clean.

Step 9

Remove the loaf from the oven and let it cool in the pan for 10 minutes before lifting it out using the parchment paper. Place the loaf on a wire rack to cool completely.

Step 10

Once cooled, slice the loaf into 12 pieces and serve lightly toasted with your choice of keto-friendly toppings.
