  • 3 medium Quinces
  • 2 cups Water
  • 2 tablespoons Lemon juice
  • 1 cup Powdered erythritol
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Liquid pectin

Directions

Step 1

Wash the quinces thoroughly to remove any fuzz. Peel and core them, then chop them into small cubes.

Step 2

In a large saucepan over medium-high heat, combine the chopped quinces and water. Bring to a boil, then reduce heat to medium. Cover and simmer for about 30-35 minutes or until the quinces are soft and tender.

Step 3

Once the quinces are soft, use a potato masher or immersion blender to mash them into a smooth consistency.

Add the lemon juice and powdered erythritol to the quince mixture, stirring until well blended.
