Ingredients

  • 1.5 cups almond flour
  • 1 tablespoon coconut flour
  • 1.5 teaspoons baking powder
  • 0.5 cup granulated erythritol
  • 3 units large eggs
  • 0.25 cup unsweetened almond milk
  • 0.25 cup butter, melted
  • 1 teaspoon vanilla extract
  • 0.5 cup powdered erythritol

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a donut pan with non-stick spray or butter.

Step 2

In a large mixing bowl, combine almond flour, coconut flour, and baking powder. Stir in the granulated erythritol until well-mixed.

Step 3

In another mixing bowl, whisk together the eggs, almond milk, melted butter, and vanilla extract until smooth.

Step 4

Pour the wet ingredients into the dry ingredients and mix until a thick batter forms.

Step 5

Spoon or pipe the batter into the prepared donut pan, filling each cavity about 2/3 full.

Step 6

Bake for 12-15 minutes or until the donuts are golden brown and a toothpick inserted in the center comes out clean.

Step 7

Allow the donuts to cool for about 5 minutes in the pan before transferring them to a wire rack to cool completely.

Step 8

Once cooled, place the powdered erythritol into a shallow bowl. Gently coat each donut by dipping it in the erythritol, covering both sides evenly.

Step 9

Serve immediately or store in an airtight container for up to 3 days.
