Ingredients

  • 2 tablespoons Coconut oil
  • 1 pound Beef chuck, cut into 1-inch cubes
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 cups Large radishes, cut into quarters
  • 1 medium Onion, chopped
  • 3 cloves Garlic, minced
  • 1 tablespoon Ginger, minced
  • 2 tablespoons Curry powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Coriander powder
  • 1 can (13.5 oz) Coconut milk, full-fat
  • 1 cup Beef broth
  • 1 tablespoon Lime juice
  • 0.25 cup Fresh cilantro, chopped

Directions

Step 1

In a large pot or Dutch oven, heat the coconut oil over medium-high heat.

Step 2

Season the beef cubes with salt and black pepper. Add them to the pot and sear on all sides until browned. Remove the beef from the pot and set aside.

In the same pot, add the chopped onion and sauté until translucent, about 5 minutes.
