Ingredients

  • 2 pounds pork ribs
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 4 garlic cloves, minced
  • 1 medium tomato, chopped
  • 2 tablespoons fish sauce
  • 8 cups water
  • 2 tablespoons tamarind paste
  • 1 cup radish slices
  • 1 cup green beans, trimmed
  • 1 medium eggplant, cubed
  • 2 cups spinach or kangkong leaves
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 1 whole red chili (optional)

Directions

Step 1

Heat olive oil in a large pot over medium heat.

Step 2

Add chopped onions and sauté for about 3-4 minutes until translucent.

Step 3

Add minced garlic and continue to sauté for 1 minute until fragrant.

Add chopped tomato and cook until softened, about 3 minutes.

Add pork ribs to the pot and cook until browned on all sides, about 8-10 minutes.

Stir in fish sauce and mix to coat the pork well.
