Ingredients

  • 500 g Pork tenderloin
  • 60 ml Coconut aminos
  • 120 ml Coconut milk (full fat)
  • 1 tbsp Ginger, minced
  • 2 cloves Garlic, minced
  • 1 tsp Ground coriander
  • 1 tsp Turmeric powder
  • 1 tsp Ground cumin
  • 1 tsp Erythritol or stevia
  • 1 tsp Salt
  • 0.5 tsp Ground black pepper
  • 1 tbsp Lemon juice
  • 8 Bamboo skewers
  • 120 g Unsweetened peanut butter
  • 30 ml Tamari or more coconut aminos
  • 2 tbsp Lime juice
  • 60 ml Water
  • 0.5 tsp Red chili flakes

Directions

Step 1

Soak bamboo skewers in water for at least 30 minutes to prevent them from burning.

Step 2

Slice the pork tenderloin into thin strips, about 1/4 inch thick.

Step 3

In a bowl, mix coconut aminos, coconut milk, minced ginger, minced garlic, ground coriander, turmeric powder, ground cumin, erythritol, salt, ground black pepper, and lemon juice to make the marinade.

Step 4

Add the pork slices to the marinade, stirring to coat the pork well. Cover and refrigerate for at least 2 hours, or overnight for best results.

While the pork marinates, prepare the keto peanut sauce by combining unsweetened peanut butter, tamari (or more coconut aminos), lime juice, water, and red chili flakes in a small saucepan.
