Ingredients

  • 2 English cucumbers
  • 0.5 teaspoon Salt
  • 0.5 cup Full-fat sour cream
  • 2 tablespoons Fresh dill
  • 1 tablespoon Fresh lemon juice
  • 0.5 teaspoon Powdered erythritol
  • 0.25 teaspoon Black pepper
  • 0.25 Red onion

Directions

Step 1

Slice the cucumbers very thinly using a mandoline slicer or a sharp knife. Aim for slices that are about 1/8 inch thick.

Step 2

Place the sliced cucumbers in a colander, sprinkle with salt, and gently toss to ensure the salt is evenly distributed. Allow them to sit for about 10 minutes to draw out excess water.

Step 3

Finely chop the fresh dill and quarter the red onion, then thinly slice it to create quarter rings.

Step 4

In a large mixing bowl, combine the sour cream, fresh dill, lemon juice, powdered erythritol, and black pepper. Mix well until smooth and creamy.

Step 5

After the cucumbers have released some water, gently squeeze them with paper towels or a clean kitchen towel to remove as much moisture as possible.

Step 6

Add the cucumbers and onion rings to the dressing and toss gently to coat the cucumbers and onions with the dressing evenly.

Step 7

Taste and adjust the seasoning with additional salt, lemon juice, or sweetener if needed.

Step 8

Chill the salad for at least 30 minutes in the refrigerator before serving to let the flavors meld together. Serve cold as a refreshing side dish.
