Ingredients

  • 2 cups Almond flour
  • 1.5 cups Mozzarella cheese
  • 2 tablespoons Cream cheese
  • 2 large Egg
  • 1 teaspoon Baking powder
  • 1 tablespoon Olive oil
  • 4 ounces Pancetta or bacon
  • 0.5 cup Heavy cream
  • 0.5 cup Parmesan cheese
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Garlic powder
  • 2 tablespoons Parsley
  • 0.25 teaspoon Salt

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

In a microwave-safe bowl, combine the mozzarella cheese and cream cheese. Microwave on high for about 1 minute or until melted. Stir until smooth.

Step 3

Add almond flour, baking powder, and 1 large egg to the cheese mixture. Mix well to form a dough.

Step 4

Place the dough between two sheets of parchment paper and roll out to about 1/4-inch thick.

Step 5

Remove the top parchment paper and prick the dough with a fork to prevent bubbling.

Transfer the parchment with dough onto a baking sheet. Bake for 8-10 minutes until lightly golden.

While the crust is baking, in a skillet over medium heat, cook pancetta or bacon until crisp. Remove and set aside, reserving 1 tablespoon of fat.
