  • 1 teaspoon Vanilla extract
  • 1 teaspoon Pistachio extract
  • 0.25 cup Heavy cream
  • 0.5 cup Chopped pistachios
  • 0.5 cup Powdered erythritol
  • 2 tablespoons Heavy cream (for glaze)
  • 0.25 cup Chopped pistachios (for topping)

Directions

Step 1

Preheat your oven to 350°F (175°C) and lightly grease a donut pan with cooking spray or butter.

Step 2

In a large mixing bowl, whisk together almond flour, coconut flour, baking powder, salt, and erythritol until well combined.

Step 3

In a separate bowl, melt the unsalted butter and let it cool slightly.

Step 4

Add eggs, vanilla extract, pistachio extract, and heavy cream to the melted butter, whisking until smooth.

Step 5

Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the chopped pistachios.

Step 6

Spoon the batter evenly into the prepared donut pan, filling each cavity about 3/4 full.

Step 7

Bake for 12-15 minutes, or until the donuts are golden brown and a toothpick inserted into the center comes out clean.

Step 8

Allow the donuts to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Step 9

To make the glaze, whisk together powdered erythritol and heavy cream in a small bowl until smooth.

Step 10

Once the donuts are cooled, dip each donut top into the glaze, then sprinkle with additional chopped pistachios.

Step 11

Let the glaze set for a few minutes before serving.
