Ingredients

  • 6 pieces chicken thighs
  • 2 whole red bell peppers
  • 2 whole red chili peppers
  • 0.25 cup lemon juice
  • 0.5 cup olive oil
  • 2 tablespoons red wine vinegar
  • 4 whole garlic cloves
  • 1 tablespoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup fresh parsley

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Remove seeds from the red bell peppers and red chili peppers, then coarsely chop them.

Step 3

In a blender or food processor, combine the chopped bell peppers, chopped chili peppers, lemon juice, olive oil, red wine vinegar, garlic, smoked paprika, dried oregano, salt, and black pepper. Blend until you achieve a smooth paste.

Step 4

Place the chicken thighs in a large mixing bowl and pour over the piri piri sauce. Mix well to ensure the chicken is completely covered. Allow the chicken to marinate for at least 15 minutes. If you have more time, marinate for a few hours or overnight in the refrigerator for deeper flavor.

Step 5

Heat an oven-safe skillet over medium-high heat. Once hot, add the marinated chicken thighs, skin side down. Sear them for about 3-4 minutes until the skin is crispy and golden brown.

Step 6

Turn the chicken thighs over, transfer the skillet to the preheated oven, and roast for 30-35 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).

Step 7

Remove the skillet from the oven and let the chicken rest for a couple of minutes.

Step 8

Garnish with chopped fresh parsley before serving and enjoy your Keto Piri Piri Chicken.
