  • 2 cups Almond flour
  • 0.25 cup Coconut flour
  • 0.25 cup Unsweetened shredded coconut
  • 0.5 cup Erythritol granulated sweetener
  • 0.5 cup Butter
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 2 teaspoons Pineapple extract
  • 8 ounces Cream cheese
  • 0.5 cup Heavy cream
  • 1 teaspoon Gelatin powder
  • 2 tablespoons Water
  • 3 drops Yellow food coloring
  • 0.25 teaspoon Salt

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease an 8-inch tart pan with removable bottom.

Step 2

In a medium bowl, combine 2 cups of almond flour, 0.25 cup of coconut flour, 0.25 cup of shredded coconut, and 0.25 cup of erythritol. Mix well.

Step 3

Melt 0.5 cup of butter and add it to the dry ingredients along with 1 large egg and 1 teaspoon of vanilla extract. Stir until a dough forms.

Press the dough evenly into the bottom and up the sides of the prepared tart pan. Prick the bottom with a fork to prevent bubbles.

Bake in the preheated oven for 10 to 12 minutes until the edges are golden. Let it cool completely.
