Ingredients

  • 6 pieces ripe plums
  • 2 cups almond flour
  • 0.5 cup erythritol
  • 1.5 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 3 pieces large eggs
  • 0.5 cup unsalted butter, melted and cooled
  • 0.25 cup heavy cream
  • 0.25 teaspoon salt
  • 1 teaspoon lemon zest
  • 0.25 cup slivered almonds (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a 9-inch round cake pan with parchment paper.

Step 2

Wash the plums and cut them in half to remove the pits. Slice into thin wedges and set aside.

Step 3

In a large mixing bowl, combine almond flour, erythritol, baking powder, ground cinnamon, and salt. Mix well.

Step 4

In a separate bowl, whisk together the eggs, melted butter, heavy cream, vanilla extract, and lemon zest until smooth.

Step 5

Pour the wet ingredients into the dry ingredients and mix until just combined. Avoid over-mixing.

Step 6

Transfer the batter into the prepared cake pan and spread evenly with a spatula.

Step 7

Arrange the plum slices on top of the batter in a circular pattern, slightly pressing them into the batter.

Step 8

Optionally, sprinkle slivered almonds over the top for added crunch.

Step 9

Bake in the preheated oven for about 35 to 40 minutes or until the cake is golden brown and a toothpick inserted into the center comes out clean.

Step 10

Remove from the oven and let the cake cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.

Step 11

Slice and serve the Keto Pflaumenkuchen warm with a dollop of whipped cream if desired.
