  • 4 medium zucchini
  • 2 tablespoons olive oil

  • 0.5 cup basil pesto
  • 0.25 cup parmesan cheese
  • 2 cloves garlic cloves
  • 1 cup cherry tomatoes

Directions

Step 1

Begin by preparing the zucchini noodles. Use a spiralizer to create noodles from the zucchini. Set aside in a colander and sprinkle with a little salt; this helps draw out moisture.

Slice the chicken breasts into thin strips. Season them with salt and black pepper.
