Ingredients

  • 8 pieces Chicken thighs, bone-in and skin-on
  • 1 cup Olive oil
  • 6 pieces Red chili peppers, deseeded
  • 4 cloves Garlic cloves, minced
  • 2 tablespoons Paprika
  • 1 tablespoon Dried oregano
  • 0.25 cup Lemon juice, freshly squeezed
  • 2 tablespoons Apple cider vinegar
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley, chopped (for garnish)

Directions

Step 1

Preheat the oven to 400°F (200°C).

Step 2

In a blender or food processor, combine olive oil, red chili peppers, garlic, paprika, dried oregano, lemon juice, apple cider vinegar, salt, and black pepper. Blend until smooth to create the Peri-Peri sauce.

Step 3

Reserve about 1/4 cup of the Peri-Peri sauce for basting.

Place the chicken thighs in a large bowl or zip-top bag. Pour the remaining sauce over the chicken and ensure it's well coated. Marinate for at least 30 minutes, or overnight in the refrigerator for best flavor.

Heat a large ovenproof skillet over medium-high heat. Place the chicken thighs skin side down in the skillet and cook until the skin is golden brown and crispy, about 5–7 minutes.

Flip the chicken thighs and baste with the reserved 1/4 cup of Peri-Peri sauce.

Transfer the skillet to the preheated oven. Bake the chicken thighs for 40–45 minutes or until the internal temperature reaches 165°F (75°C).

Step 8

Remove the chicken from the oven and let it rest for 5 minutes.

Step 9

Garnish with fresh chopped parsley before serving.
