Ingredients

  • 500 grams Fresh squid
  • 1 large Lemon
  • 2 tablespoons Fresh parsley
  • 1 tablespoon Fresh basil
  • 3 tablespoons Olive oil
  • 1 large Garlic clove
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 liters Water

Directions

Step 1

Start by cleaning the squid: remove the head from the body, pull out the transparent cartilage, and remove the skin. Rinse thoroughly to remove any remaining innards or sand.

Step 2

Bring 2 liters of water to a boil in a large pot. Add 1 teaspoon of salt to the water.

Step 3

Once boiling, gently add the squid to the pot and let it cook for 2-3 minutes until just tender. Be careful not to overcook the squid as it can become rubbery.

While the squid is cooking, zest and juice the lemon, set aside.
